Home made biscuit mix:

This is for people who love biscuits and pancakes and not much time for putting it together.

10 cupss all purpose unbleached flour
1/3 cup baking powder
1/4 cups sugar  (I use Splenda)
4tsp salt     2 cups shortening.
Place all in a large sealable container and  blend in shortening  with pastry blender, till it resembles course crumbs.,

Biscuits.   2 cups mix, make a well in center add 1/2 cup milk, stir just till mixture follows fork around the bowl.  Knead on floured surface 8-10 strokes.  Roll to desired thickness and cut with biscuit cutter. Bake on ungreased cookie sheet for  at 450 for 10-12 minutes untill golden.

Pancakes:2 cups mix:  2 beaten eggs, and 1 cup milk, stirring till blended but slightly lumpy.  Add blueberries or what ever berries you like. We love cranberries.  1/4 cup mix per pancake on hot griddle.

Muffins:  3 cups mix, 3 tblsp. sugar ,  into 1 cup of milk beat 1` egg, add to mixture, stir till mositened..   Fill greased muffin cups 2/3 full.  Bake at 400  20-25 minutes.
All these times depend on your oven. Also I use Splenda sugar substitute, but real sugar may be used.
